Why Buckwheat?

🍪 Ingredients (makes about 10–12 cookies)
1 cup buckwheat flour
1/2 cup almond meal (or hazelnut meal for extra depth)
1/4 cup raw cacao powder
1 tsp baking powder
Pinch of sea salt
1/3 cup melted coconut oil
1/4 cup pure maple syrup or monk fruit syrup (for a sugar-free version)
1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)
1 tsp pure vanilla extract
1/3 cup chopped dark chocolate (85% or sugar-free chocolate chips)
Optional: crushed walnuts, orange blossom, or a pinch of cinnamon for soul flair
🌿 Directions
Preheat your oven to 180°C (350°F) and line a tray with baking paper.
Mix dry ingredients: In a large bowl, whisk together buckwheat flour, almond meal, cacao, baking powder, and salt.
Whisk wet ingredients: In another bowl, combine melted coconut oil, syrup, egg (or flax egg), and vanilla.
Combine: Pour the wet mix into the dry, stir until you get a thick, glossy dough. Fold in the chocolate chunks.
Scoop & shape: Roll into small balls and flatten slightly — they won’t spread much.
Bake for about 10–12 minutes, until just firm on the edges but still soft in the center.
Cool (if you can wait): Let them rest before indulging in their chewy, fudgy magic.
